14 cup granulated sugar
2 tablespoons paprika
1 tablespoon onion powder
2 tablespoons seasoned salt
12 tablespoon garlic powder
12 tablespoon chili powder
12 tablespoon lemon pepper
1 tablespoon sage dried
12 teaspoon basil dried
12 teaspoon rosemary dried
14 teaspoon cayenne pepper

Mix and store

12 cup paprika
6 tablespoons kosher coarse salt
14 cup black pepper coarsely ground
3 tablespoons basil dried
3 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons oregano dried
2 tablespoons cayenne pepper
2 tablespoons white pepper
2 tablespoons thyme dried

Mix and use for blackened dishes and any other dishes that call for Cajun seasoning

This is very good with chicken

3 green onions
2 teaspoons allspice
1 teaspoon salt
1 teaspoon ginger fresh
12 teaspoon cinnamon
12 teaspoon nutmeg
12 teaspoon black pepper
2 garlic cloves
4 bay leaves
2 jalapeno peppers diced
1 habanero chile
2 tablespoons oil

Put everything except oil in food processor and chop fine Add oil slowly until smooth

Coat meat and let sit for several hours or overnight

12 cup kosher coarse salt
12 cup brown sugar
1 12 tablespoons garlic powder
1 12 tablespoons onion powder
1 tablespoon dill weed
12 tablespoon savory

Mix together all ingredients breaking up any clumps

Coat filets with a heavy layer reserving a couple of tablespoons for later use

Wrap in plastic wrap and refrigerate for 34 hours

Unwrap and thoroughly rinse with cold water You must rinse VERY clean otherwise the fish will be much too salty

Let fish sit out until it becomes slightly tacky about 1 hour

Prior to cooking sprinkle with fresh ground black pepper and the remaining rub Grill or broil until fish flakes easily with a fork No need to turn over

1 cup Dr Pepper NOT diet
14 cup dark soy sauce
14 cup lime juice
1 12 cup oil
1 teaspoon hot sauce

Mix all and marinate beef overnight

1 gallon water
1 cup kosher coarse salt
1 cup honey
2 tablespoons Tender Quick
3 bay leaves
14 teaspoon cloves
12 teaspoon pickling spice your choice

Bring to boil Let settle back to room temperature

If injecting inject in breasts thighs and legsabout 2 ounces in each Let sit refrigerated for 24 hours

If soaking submerge entire bird in brine for 48 hours under refrigeration
